I've got a few more questions to ask of Chef Ledbetter. Luckily, he was available to complete them. I think working with one's wife and not having a miserable commute helps to keep a positive outlook, but you should decide for yourself.

Hardest lesson you've learned:
Sometimes when you take chances, you have to figure out [what to do] when your expectations take a turn; you have to adjust and make new ones.


How are you related to the event coordinator, Nicole?
She's my wife.

When you're not in the restaurant, what are you doing in your free time?
Playing with my daughter, Kennedy, and trying to explore more of Orange County.

Where did you grow up?
Huntington Beach.

What's your favorite childhood memory?
Cooking in the kitchen with my mom and grandparents.

Last song playing on your radio:

We've been listening to Rihanna and Katy Perry in the kitchen lately because it's "pop-y" and fun.

What were you up to five years ago?
At LarkCreekSteak, and I went on a three-week trip to Thailand.

Last movie watched; how was it?

Gravity with Sandra Bullock, and I thought it was pretty good.

Do you have any skills that are not food-related?
Yes, I'm really good with numbers.

What did you study in school? Did you always plan on becoming a chef?
I went to culinary school in Pasadena. I didn't plan on being a chef until I was about 23.

Last thing you looked up online.
Affogatos. We are thinking of putting them on the menu, and are currently testing them out.
