We chow on puffy tacos and Diablo fries before the market gets ready to close for the night. And there's still time for a few more questions.  Roland-- the tortillas we purchased were excellent!

Read our interview with Roland Rubalcava of Rubalcava's, Part One.
And now, on to Part Two . . . .

When you're not in the kitchen cooking, what are you doing?
Hanging out with my wife and family. Also taking care of my puppy Bane, a 7-month-old Cane Corso.

Last song playing on your radio:
Soundgarden.

Where did you grow up?

I grew up in the beautiful city of Anaheim.

Hardest lesson you've learned:

What's your favorite childhood memory?
My dad taking the family and me to the park to feed the ducks and go fishing.

Are you superstitious?
I'm not very superstitious, but when life throws various signs at you about something, you should listen.

What were you up to five years ago?
Working on permits for the beer and wine license.

Last movie watched; how was it?
Django-- It was really good.

Last thing you looked up online:
Snow sleds.

Do you have any skills that are non-food related?
I am a mariachi singer at heart.

What would you be doing if you weren't in this business?
Law enforcement or sales.
