Balmy Orange County weather is a powerful thing. Just ask Kurt Schaeffer. A New York transplant, he's adapted to the sunshine. We find out what he loves and remembers most in today's edition.

When you're not in the kitchen cooking, what are you doing?
My favorite thing is hanging out with my daughter, Carly. She's 15; I love watching her play soccer. I also love golfing!

Last song playing on your radio:
Either Pearl Jam, Dave Matthews Band or Beck.


Where did you grow up? If you're not from Orange County, what brought you here?
Scotia, New York. I want on vacation to Orange County to visit my sister. It was 8-degrees when I left New York, and when I landed it was about 80 degrees here. I knew then and there I should move!

Hardest lesson you've learned:
Integrity when it comes to serving food product.

What's your favorite childhood memory?
Thanksgivings as family. It's my favorite holiday. I come from a large Italian family, and we would have 40 people over for Thanksgiving dinner-- eating great food and making memories.

What were you up to five years ago?
Doing what I love, cooking and making great food.

Any good stories about patrons falling into the bay?
A few months ago,  there was a boat that capsized right out in front of the Bistro. The boat had multiple lobster cages on deck, and they all started slipping into the bay. Everyone on the boat started jumping in after them, and then people on the patio were helping out too. It was absolute chaos.

Last book you read.
Kitchen Confidential by Anthony Bourdain.

When you use the Internet, what are you looking up?
Formula One, NY Mets, NY Giants, and All Source Recipes.

What was the last thing you searched for online?
Bread pudding.

Do you have any skills that are non-food related?
I take pride in being a good dad and a half-way decent golfer.

What would you be doing if you weren't in this business?
I have always wanted to be a photographer.
