No. 6: Anything By Taco Maria

Kings of the calle

I have been known to wait outside Taco Maria for 20 minutes, desperate to be the first in line before the masses come. I've been known to drunkenly tweet that if you don't know Taco Maria, you don't know Mexican food, and fight with people over said sentiments. I've plugged Taco Maria God-knows-how-many times, had them with me in an NPR segment, crowed about them to anyone within earshot.

"What should we get?" is the inevitable question.

"EVERYTHING," is my inevitable answer.

And I stand by that assertion. Everything that comes out of Carlos Salgado's hands is brilliant, is the best summation of what being a Mexican in Orange County is and can be. Salgado's carnitas tacos can best any michoacano; his aguas frescas are alta cocina bliss; his burritos can please everyone from the bro to the wab, the hoity toity Newporter to the most-happening pocho.

Suggestions? EVERYTHING. Didn't you read the post? Okay, the crispy burrito. Someone get this man a restaurant, and STAT!!!

Saturday farmers market at OC Mart. Never a long line.

Everything is amazing? Please. I've tried it once and it's absolutely not "real " Mexican food. People who frequent these trucks must be immune to the crappiness that they serve.

Taco Maria is not what it used to be. We tried them last week and everything was too salty and they have raised their prices for the second time. $3.50 for a salty taco is not a deal. I have eaten from their truck at least ten times, but last time was not very good.

Disturbingly, Carlos has had people tell him that he is not serving "real" Mexican food.

@soyyo I think soyyo thinks "real" Mexican food is a two-item combo plate w/ rice and beans. Then again, soyyo hasn't told us what they think real Mexican food is.

@soyyo Please tell Us what's "real"...

@mrsjoujou Can't speak for the saltiness (and I'm very particular on that point--I hate salt) but as to price points: EVERYONE is raising prices. Fuck bánh mìs were $1.25 no more than 5 years ago...
