What does a love of bacon and Japanese food have to do with Daniel Hyatt's menu? We don't know yet, but it may influence his decisions as he transitions Juliette's autumn selections. Something we do know: their freezer is only big enough to store ice cream.

When you're not in the kitchen cooking, what are you doing?
Golfing with my girlfriend and grilling.

Last song playing on your radio/smart phone/iPod:
Not sure about the song, but definitely The Grateful Dead.


Let's talk about the golf game. How's it going?
The golf game is hit and miss. I don't ever practice. I just go out every Sunday and play. But it is enjoyable to me to be on a golf course. It's peaceful compared to the restaurant.

Hardest lesson you've learned:
You are responsible for your actions. Your decisions are yours. I made a lot of bad decisions growing up, and it made me think things through a little more as I got older.

What's your favorite childhood memory?
Many great memories. I think just hanging out with my older brother when we were younger. I think he was somewhat fearless, which I really thought was cool.

Are you superstitious?
Not superstitious at all. I figure what happens, happens because of personal decisions.

What were you up to five years ago?
I was just starting as Chef de Cuisine at Delius in Signal Hill.

Last book you read or last movie watched.
I don't have much time to read, so I have not read in a while. I have kinda been reading The Celestine Prophecy on and off for a few years. The last movie watched was Jiro Dreams of Sushi.

Last thing you looked up/searched online:
Researching some exotic pioppini mushrooms for the new menu.

Do you have any skills that are non-food related?
Not really. I put a little effort into trying to play the guitar, but it is just noisy. Food is what I do.

What would you be doing if you weren't in this business?
When I was younger I wanted to be a lawyer. However, I really could not see myself doing anything else.
