No. 49: Gordita de Tinga at El Rincón Chilango

Doesn't look like much, but man, that taste...
We are now more than halfway through our march toward our favorite dishes in Orange County. It's run the gamut from Japanese to Mexican, from American comfort food to post-Ramadan fast food. When we get to the end, you'll know it's time to go pick up your free copy of this year's Best Of issue in dark corners, creepy alleys, and fine businesses everywhere.

If I told you one of my favorite lunches was simmered chicken, lettuce, cheese, and a fried tortilla, you'd laugh at me and accuse me of selling out to the Yum! Brands impostor... but the difference between a Taco Bell chicken taco and a gordita from El Rincón Chilango in Santa Ana is huge.

First of all, the chicken at El Rincón Chilango actually has flavor; second, the masa is formed when you order it, cooked, and then stuffed. The cheese is quesillo, not assorted orange shreds, and the lettuce is there for crunch. Dip it in their excellent salsa de chile de árbol; two of these is a huge lunch.

I've hit ERC twice now but haven't found the sweet spot.  I'll give this one a try next time.

 @20ftjesus The sweet spot is quesadillas de flor de calabaza or quesadillas de huitlacoche, tlacoyos de haba, pambazos, and these things.
