As I wrote about a few months ago, The Boiling Crab, the Cajun-Vietnamese crawfish chain that showed everybody how it's done, was planning to open near South Coast Plaza. That restaurant will have its grand opening today at the location vacated by Sumo at 1500 W MacArthur Blvd.

The chain, born in Little Saigon in 2005, has grown like gangbusters since then. This will be only the third restaurant (if you don't count their to-go location) for the crawfish empire that has already expanded to LA County, Texas, Las Vegas and San Jose, not to mention inspired a whole lot of imitators in its home turf...like the very good Kickin' Crab less than a block away.

They are growing like gangbusters but "this will be only the third restaurant...for the crawfish empire..." huh?

They're also opening one up in San Diego, in the Mira Mesa area.
