Beverly Hills Macaron Maker To Open In Fashion Island

I think it was about 2005 that the Chowhound boards went mad for macarons, those colorful, chewy, crispy, filled cookies of Parisian persuasion. I remember it well because there was a particularly lively debate over whose macarons were better, Boule's or Jin Patisserie.

Boule's long gone now, but the macaron madness seemed to have reached the crescendo that finally lends some credence to stories that NPR and Salon did two years ago proclaiming them as the heir of the cupcake craze.

There have always been OC bakers and specialty food shops like like Layer Cake Bakery and Pascal Epicerie that offered them, as well as a few Vietnamese bakeries including Au Coeur De Paris and Pat'a Chou that also did. But the last few months have brought Chubbicakes in Garden Grove and Rocq in Lake Forest, both with macarons close to the top of their menu roster.



Now there's going to be one more entrant called 'lette Macaron which seems laser-focused on the macarons and nothing but the macarons. The bakery employs Christophe Michalak, a French pastry chef who won the 2005 Coupe du Monde de la Pâtisserie and is owned by Paullete Koumetz, who explains on her website that it's not called "Paulette Macaron" because she was the "victim of a trademark lawsuit."

They are based in Beverly Hills, started in 2007, with stores in Larchmont Village and Old Town Pasadena; and now plans to open in Fashion Island this spring. Some flavors to expect: salted caramel, Sicilian pistachio, Earl Grey tea, lychee and passion fruit.
