Web Extra: In the Kitchen With the Playground's Jason Quinn

• One could argue that the Playground guys see their food as art, and ordering it is no different from purchasing music. Would someone say "I'll take a "Jay-Z: Heart of the City"...but can you please hold the bass line"?   ;)

• I get the no well-done meat philosophy, and I like it. The mayo issue I didn't like understand until I looked at it as I do with music. Art is, fundamentally, about communication and if someone requested that I send them a track that I made but to take out the vocals and turn up the drums, I simply wouldn't do it. It is no longer my vision on what that song is and is suppose to be.  I'm not sure how well that translates into food as a whole, but since I also view food as an art, I can understand it, and I think if people starting looking at Jason's food not simply a tasty nourishment, but as his art, it'd make more sense, and maybe even respectable, especially as a movement to change how people view great innovated cuisine. However, while both food and music are art, they are still very different mediums, and the same ideas or paradigms may not apply to both equally. 

• So the "no well-done meat" policy I can get behind (sort of), but really?  Not willing to hold the mayo for someone who requests it?  I love mayo, so I would enjoy every bit, but half the people I know are not fans.
