No. 10: Hawaiian Sausage and Eggs at Break of Dawn

Eggs and sausage: the simplest breakfast on Earth, even easier than a quesadilla (on the latter, you need to ensure the cheese melts just so, and the tortilla crisps but doesn't blacken). Buy some sausage, get some eggs, throw them on the grill, and most anyone will gobble up what you place in front of them. It's always a breakfast almost always universally good, but what Dee Nguyen at Break of Dawn makes is extraordinary--the Clayton Kershaw of OC's eggs-and-breakfast scene.

First starts the egg over easy: the whites silky, yolk about to coagulate but remaining stubbornly runny. Penetrate it, and the yolk happily spills onto the brown rice, a mound topped by the pickled, sweet strands of carrot and daikon. On the side is linguiça (which everyone on the mainland calls Hawaiian sausage), with that river of scallion puree.

It really is a simple meal, but it's the epitome of something's sum being greater than its parts. Sausage and eggs is my go-to American breakfast, and this is the one I long for, the one I order at the expense of Nguyen's other meals--it's like playing Rubber Soul again and again, even though you own the entirety of the Beatles' oeuvre. Limiting, I know--but, fuck, is that album/breakfast good!

I object....There is no way this should be the #10, based on a breakfast dish!!!!! There is not one Mexican breakfast plate served in Santa Ana that would not be better than this one!!!!!....We don't call it (HAWAIIAN SAUSAGE) here either!.......Hang loose Brother!

Okay I have a couple problems with this place.  1) You cant put brown rice in Hawaiian food EVER, white sticky rice only (calrose).  2) I certainly hope this place isn't calling that "Hawaiian Sausage" its Portuguese Sausage period.  3) It SHOULD be served in Styrofoam containers whether your eating in or taking out. 4)and the only condiments should be Aloha shoyu and Sriracha!This is directly from their menu.Sausage and Rice Portuguese-Hawaiian Sausage, Green Papaya and Sesame Salad, Scallion Puree,  Two Fried Eggs  10.5If Sam Choy saw this he would choke on his Musubi! Find your Local L&L or Aloha  or even Ono Hawaiian BBQ  (Ono being my least favorite) and go order the Portuguese sausage plate and you'll get 3 times more food for only 5 bucks! Or better yet!  Go to Marukai on Harbor,  buy the sausage yourself and make it at home.And while your there try the Loco Moco...Insanely good and insanely gluttonous!

My favorite Mexican place is my fovorite because it serves breakfast all day... Is there better mexican close to where I live? Yes.  Do they serve Machaca at dinner time? No! Breakfast is and always will be the best meal of the day...any time of the day!

Not all sausages are similar in quality or prices. Most portuguese hawaiian sausages made in the island are very greasy using around 50% pork fat and byproducts, but thats how the native enjoy them. Ours are made here in oc with better ingredients and 30% fat. There is a different between linguiza and hawaiian. Linguiza has more of a black peppery taste whereas hawaiian loves sweet and tangy. The rice is actually calrose cooked pilaf style with caramelized garlic, onion and other sorry I cant tell ingredients.

No disrespect intended Chef! Like I said the menu looks sick and I was so inspired that I made Portuguese sausage eggs and rice for breakfast this morning and brewed some kona coffee that my Aunty in Mililani mailed to me!  I appreciate the response and Gustavo and Dave's perspective. 

Gustavo... Have we officially hugged it out?  I might actually buy your book now when it comes out!

Yeah, BoD isn't plate lunch, but this dish IS good. Plate lunch has to have two scoop rice one scoop mac. Think of this as an homage to plate lunch.
