The tempura-fried poached egg at Break of Dawn isn't normally an item served by itself -- it's the star of whatever ensemble it's cast with. It most often shows up in a dish of barbecue pulled pork piled onto jalapeno cornbread and served with an Asian slaw, but it might show up in other roles. If you attended Chef Dee Nguyen's one-night-only pop-up at The Crosby, the tempura egg starred with braised pork belly, kabocha puree and a goji berry gastrique.

You could plop that superstar egg on a bowl of plain, steamed rice and instantly transform nothing into a most brilliant something. Cracking through the hot, crunchy tempura crust, correctly seasoned with just enough salt, reveals a perfectly tender poached egg white with a warm runny yolk that sauces whatever else shares the plate.

How does Chef Dee pull off the contradiction of a twice-cooked egg with a runny yolk? Does he freeze the poached egg before he deep-fries it? Is it some miracle of molecular gastronomy? In fact, there's a considerable degree of technique to perfectly poach an egg, but other than that, it's fairly straightforward, as an upcoming exclusive video will reveal.
