How do you eat an entire steer? One bite at a time. And no better way to sample the entire beast than at a yakinikuya - a Japanese style barbecue restaurant. Just as you enjoy vast differences in flavors and textures of fish at a sushi bar, beef cuts like ribeye, ribeye cap, outside skirt and tongue taste different and have varying levels of fattiness and texture: some buttery, others chewy, and all delicious.


Yakiniku is the Japanese interpretation of cook-it-yourself-at-the-table Korean barbecue, with a few differences. The Korean version starts with meats that are marinated before it arrives at your table. The Japanese style starts mostly with unseasoned meat that you dip in sauces after it's cooked. Perfectly sliced like sashimi, the presentation on the plate is meant to show off the extremely high quality of the beef.

All of Tsuruhashi's beef is at least USDA Prime, the top grade within the American scale of meat production. So what's above the top grade? Kobe beef, which is rated on the Japanese grading system that accounts for even more intramuscular marbling than USDA Prime. Tsuruhashi serves domestic Wagyu and not the nosebleed-expensive limited production Kobe beef raised in Japan. That's just as well, because I write for a free weekly paper, you see. Still, the plate of domestic Kobe short rib in my photo is under $20, and even I can swing that as an occasional treat.

Domestic or imported, Wagyu beef is almost too fatty to enjoy as a massive, 20-ounce slab of steak. Me? I'll take mine thinly sliced at Tsuruhashi, its richness tempered in more manageable bites. That way, I still have room to sample my way through the extensive menu of beef cuts, not to mention Berkshire pork, jidori chicken, seafood and vegetables. It's a long food chain. Why eat just one link?
