New Ramen Shop Opens In Anaheim

There's no shortage of places to slurp ramen in OC these days. We've seen a handful of new ramen shops opening. In Irvine, Shizuma and Mizuki debuted this year. And now we're learning of a new ramen-ya in Anaheim called Kappa.

Actually they've been in business since July. But apparently they waited this long before sending out press releases to work out the kinks. Smart, I say.

It finally had its official opening yesterday.

As with most ramen-yas of late, Kappa specializes in a the Kyoto-style tonkotsu broth, a deep milky brew culled from simmering pork bones for hours. But for their signature bowl, as seen above, they add organic kimchi, avocado, spinach, bean sprouts and corn.

I also hear reports that they're serving shaved ice for dessert.

Occupying the space abandoned by Lai Lai Ken, Kappa ramen has Eiji Kanazawa, the chef and co-owner, doing the cooking. Kanazawa, the press release states, was born and raised in Kyoto, Japan, and moved to Southern California in 1986. He's since worked and managed several OC restaurants, including Genkai in Irvine and Corona Del Mar, and Japon in Lake Forest.
