#40. Tacos de Rajas con Queso at Gabbi's Mexican Kitchen

Whenever it's my birthday, I ask dear old mami for one of two dishes to celebrate: asado de boda jerezano, the luscious mole of my parent's native region Zacatecas that's impossible to find in Southern California restaurants, or rajas con queso. The latter--strips of jalapeños and other chiles grilled, and served alongside melted cheese and onion--is also strangely difficult to find in Orange County restaurants given its popularity in households and that it's one of those tacos that isn't too regional to explain its rarity.

Thankfully, Gabbi's Mexican Kitchen fills this oversight among la naranja's wab restaurateurs.
It is a deceptively simple taco--pasilla instead of jalapeños, milky Oaxacan quesillo instead of Monterey Jack, with a sprinkle of cotija thrown in. The rajas melt into a glorious goop, held together by a thick corn tortilla patted out only minutes before. Gabbi's sells other tacos, but this is the only one that warrants the hefty price, because they're huge, delicious, and so much better than most carne asada chingaderas in the world.
