#58. Gobi Paratha at Traditions

We're nearly halfway through our list of 100 great dishes to eat in Orange County and its environs. See the previous choices at the end of the post.

Traditions has a great bread bakery; Edwin thought so in his review, and so do I. Naan are excellent; kulcha are even better. The king of the breads that flow out of owner Sam Gupta's kitchen, though, is whole-wheat flatbread stuffed with masala-spiced cauliflower. Instead of being rolled into the bread, this is spread as a layer between two thin sheets of the bread. My daughter calls it "Indian pizza" and can't get enough of it; we really ought to order two orders when we go, but we always convince ourselves not to. Make sure to dip the paratha into the herb (mint and cilantro) chutney; it's by far the best accompaniment.
